The smaller, slightly more exotic cousin of the lemon, limes are instantly recognizable with their smooth, bright green, skin and sweetly acidic aroma. They are an important ingredient in Mexican, Indian, Latin American and South-East Asian cookery, and their zest and juice make a handy accent for a variety of beverages and dishes.

(Fun Fact: North Americans nicknamed British sailors “Limeys” for their use of the little citrus to stave off scurvy while sailing the high seas)
