The Western Schley is the leading variety of pecan tree on the west coast. This is a large tree, growing up to 60 feet tall! It produces a soft-shelled, richly flavored nut that is a powerhouse of vitamins, fiber and nutrients. They are well known for making fabulous desserts such as pecan pie, but get creative and try sprinkling them into your savory dishes as well as for an extra bit of rich, crunchy, nutty flavor.
