Hachiya Persimmons are the astringent variety, with a darker color, and more round, oblong shape than its Fuyu cousin. They have a rich, sweet, spicy flavor, yet they need to be eaten at the right time. Until fully ripe, they are incredibly tart. When they reach ripeness, they become very soft and squishy, and are best eaten with a spoon after being cut in half, or made into a yummy, exotic jam or compote.
