2 tbsp. butter
1 cup sliced asparagus (1/2-inch)
2 tbsp. H2H Red Chianti Onions
1/3 cup diced H2H red bell pepper
4 cups chopped H2H grown Green Towers or Paris Isle lettuce
1 (6-oz.) package Foster Farms Grilled Chicken Breast Strips or organic chicken breast
1/4 cup Bernstein’s Basil Parmesan Dressing
1/4 cup sliced almonds, toasted

Melt butter in a medium skillet over medium heat. Add asparagus and Red Chianti Onions; cook and stir for 5 minutes. Add red pepper and cook for 2 minutes more. Remove from heat and let cool slightly. Place Green Towers or Paris Isle lettuce in a large bowl and top with chicken and cooked vegetables. Pour dressing over the top and toss well. Transfer to salad plates and sprinkle with almonds.

Makes 4 side or 2 main dish servings.
